Overview

L’Osteria was founded in 1999 in Nuremberg and has grown into one of Germany’s largest and fastest-growing casual dining brands. The Munich-based company is known for its iconic 45-centimeter pizzas, a great value for the money as well as the characteristic “LA FAMIGLIA” atmosphere in remarkable locations. Today the FR L’Osteria SE runs over 200 restaurants in eleven European countries through a mix of company-owned sites, joint ventures, and franchise partnerships.

In 2023, the investor McWin became the majority shareholder and continues to drive growth ever since, especially on an international level. In 2025, L’Osteria not only opened 27 new restaurants, a new company record, but also acquired the majority stake in the British brand Pizza Pilgrims, thereby laying the foundation for an Italian brand platform. The company’s goal is to become the “European Champion in Casual Dining” by 2030.

From day one, every new restaurant needs stable guest Wi-Fi, reliable POS and card payment systems, kitchen and office connectivity, and protection against power outages. For the network side, L’Osteria’s internal IT team works together with BavariaCloud GmbH.

FR L’Osteria SE at a Glance

  • Founded 1999 in Nuremberg, head office in Munich
  • 200+ restaurants in 11 European countries (Germany, Austria, Switzerland, Czech Republic, Netherlands, UK, France, Luxembourg, Poland, Spain, Denmark)
  • Company-owned sites, joint ventures, and franchise partners
  • 27 openings in 2025, a company record
  • Goal: “European Champion in Casual Dining” by 2030
  • Group brands: L’Osteria and Pizza Pilgrims (majority stake since August 2025)
  • Network concept developed with L’Osteria’s internal IT team, built and operated by BavariaCloud GmbH

The Challenge

Building a unified network across a continuously growing, multi-country restaurant brand meant solving five problems:

  • Fast, templated rollouts: New restaurants open every month. Each one needs to be network-ready within hours, without custom engineering on-site.
  • Central management across borders: All eleven countries needed to be monitored and managed from one interface, without sending IT staff to every location.
  • Reliable Wi-Fi indoors and out: Dining rooms, kitchens, offices, entrances, and terraces all need stable Wi-Fi for guests, staff, and POS systems.
  • Protecting existing investment: The existing third-party gateways had to stay in service while switching, Wi-Fi, and power protection moved to a single platform.
  • Uptime during daily operations: Short power interruptions must not disrupt POS and payment systems, especially at busy, newly opened locations.

Why UniFi

BavariaCloud GmbH developed the network architecture together with L’Osteria’s internal IT team as a standardized reference blueprint, used unchanged at every restaurant regardless of size. The approach is hybrid: existing third-party gateways stay in place, and switching, Wi-Fi, and (at newly opened sites) power protection run on UniFi.

Standardized reference design:
Every restaurant gets the same baseline set of UniFi switches and access points, so new sites go live in hours instead of days.

Central, self-hosted UniFi OS Server:
BavariaCloud GmbH runs its own UniFi OS Server in its data center instead of a public cloud. From there, the team manages and monitors every restaurant from one console, and L’Osteria keeps full control over its own data.

Coexistence with third-party gateways:
The existing gateway layer stays untouched, so established security and contracts remain in place. UniFi takes over switching, Wi-Fi, and power protection behind it.

License-free scaling:
UniFi has no recurring per-device licensing fees, so operating costs stay predictable even as L’Osteria keeps opening new restaurants.

Standardized Architecture & Hardware Footprint

Every L’Osteria restaurant follows the same reference design, developed jointly by BavariaCloud GmbH and L’Osteria’s internal IT team, whether it’s a small city-center site or a large restaurant with an outdoor terrace.

  • PoE switching: Two UniFi USW Pro 48 PoE switches form the backbone at each restaurant, powering access points, POS systems, card terminals, and other PoE devices.
  • Indoor Wi-Fi: UniFi Nano HD and U7 Pro XG access points cover the dining room, kitchen, and office for guests, staff, and POS systems.
  • Outdoor Wi-Fi: UniFi Flex HD and U7 Outdoor access points cover the terrace, entrance area, and other outdoor spaces.
  • Power protection: Every newly opened restaurant gets a UniFi 2U UPS, so switching and Wi-Fi keep running through brief power outages.
  • Gateway: The existing third-party gateway stays in service at every site; BavariaCloud GmbH integrates it into the UniFi network.
  • Centralized management: All locations connect to a central, self-hosted UniFi OS Server in BavariaCloud GmbH’s data center. That covers monitoring, firmware updates, and troubleshooting without sending technicians on-site.

Hardware Footprint at a Glance

Across the 200+ restaurants running this standard setup, the fleet-wide totals look like this (rounded):

Total UniFi devices deployed fleet-wide: 1,420+ switches, access points, and UPS units.

Third-party gateways stay in service at every site and aren’t counted here.

Extending the Blueprint: Pizza Pilgrims Enters Germany

In August 2025, L’Osteria acquired a majority stake in Pizza Pilgrims, the UK’s Neapolitan pizza brand founded in 2012 with more than 25 restaurants across Britain. Pizza Pilgrims is now preparing to open its first restaurants in Germany, and BavariaCloud GmbH is extending its UniFi blueprint to this second brand within the L’Osteria group.

For Pizza Pilgrims’ expansion into Germany, BavariaCloud GmbH and the group’s internal IT team adapted the reference architecture instead of copying the L’Osteria design one-to-one. The stack is now fully native UniFi, including the gateway:

  • PoE switching: Two UniFi USW Pro 48 PoE switches per restaurant, the same premium-tier standard used across the group.
  • Indoor Wi-Fi: UniFi U7 Pro XG access points provide high-density Wi-Fi 7 coverage across the dining room and kitchen.
  • Outdoor Wi-Fi: UniFi U7 Outdoor access points cover terraces and outdoor seating areas, matching the outdoor standard already proven at L’Osteria.
  • Gateway: A UniFi Dream Machine Pro (UDM Pro) replaces the third-party gateway used at L’Osteria sites. It handles routing, firewall, and UniFi Protect NVR functionality natively, at every Pizza Pilgrims location.
  • Connectivity backup: The new UniFi 5G Backup provides automatic cellular failover, keeping POS systems and guest Wi-Fi online if the primary internet connection goes down.

Pizza Pilgrims’ management model also differs from L’Osteria’s: instead of one centrally hosted UniFi OS Server, each restaurant’s UDM Pro runs its own local UniFi OS Server. All locations are grouped into a single UniFi Fabric, managed through UniFi Site Manager (UniFi’s cloud-based web UI at unifi.ui.com). BavariaCloud GmbH gets one consolidated view across every site, without running a dedicated on-premises or self-hosted controller for the brand.

Future Outlook

As L’Osteria continues its growth toward becoming the “European Champion in Casual Dining” by 2030, the UniFi 2U UPS will become a standard component at every location, not just at new openings.

With Pizza Pilgrims now following its own native UniFi blueprint alongside L’Osteria’s, BavariaCloud GmbH operates two parallel management models: a centrally hosted UniFi OS Server for L’Osteria, and a UniFi Fabric of independently managed Dream Machine Pro consoles for Pizza Pilgrims, unified through UniFi Site Manager. Either way, every new restaurant follows a defined reference design and is fully integrated into the group’s Europe-wide infrastructure from its opening day.
